Oh, the Places You’ll Go! Cupcakes

Ingredients

  • 1 boxed cupcake mix, prepared
  • 1 recipe buttercream frosting
  • Red gel food colouring
  • 24 Sour Power Candies

Buttercream Frosting

  • 3 cups powdered sugar
  • ¾ cup butter, softened
  • 1 teaspoon vanilla extract
  • 1-2 Tablespoons milk

Directions

  1. Prepare the cupcake mix according to the package directions and bake as cupcakes. Allow to cool completely.
  2. While the cupcakes cool, make the buttercream frosting. In a large bowl, beat the butter and powdered sugar with an electric mixer until smooth.
  3. Add the vanilla extract, then mix in the milk 1 teaspoon at a time until the frosting reaches a smooth, pipeable consistency.
  4. Remove and reserve about 1 cup of the white frosting. Tint the remaining frosting red using icing tint until you reach the desired shade.
  5. Once the cupcakes are completely cool, place a rounded teaspoon of white frosting in the centre of each cupcake.
  6. Gently wrap each candy strip into a loose spiral and place it upright in the centre of the cupcake, using the frosting to hold it in place.
  7. Fit a piping bag with a star or round tip and fill with the red frosting. Pipe frosting around the candy to finish decorating each cupcake.
