- 1 boxed cupcake mix, prepared
- 1 recipe buttercream frosting
- Red gel food colouring
- 24 Sour Power Candies
Buttercream Frosting
- 3 cups powdered sugar
- ¾ cup butter, softened
- 1 teaspoon vanilla extract
- 1-2 Tablespoons milk
Directions
- Prepare the cupcake mix according to the package directions and bake as cupcakes. Allow to cool completely.
- While the cupcakes cool, make the buttercream frosting. In a large bowl, beat the butter and powdered sugar with an electric mixer until smooth.
- Add the vanilla extract, then mix in the milk 1 teaspoon at a time until the frosting reaches a smooth, pipeable consistency.
- Remove and reserve about 1 cup of the white frosting. Tint the remaining frosting red using icing tint until you reach the desired shade.
- Once the cupcakes are completely cool, place a rounded teaspoon of white frosting in the centre of each cupcake.
- Gently wrap each candy strip into a loose spiral and place it upright in the centre of the cupcake, using the frosting to hold it in place.
- Fit a piping bag with a star or round tip and fill with the red frosting. Pipe frosting around the candy to finish decorating each cupcake.
