How to Make Key Lime Bundt Cake

Yields – 12 Servings | Prep Time: 12 minutes | Bake Time: 1 hour 25 minutes

Ingredients:

  • 1 cup Unsalted butter, room temperature
  • 3 cups Sugar
  • 6 large Eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lime zest
  • ¼ cup Key lime juice
  • 3 cups All-purpose Flour
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt
  • 1 cup Sour cream

For the Frosting:

  • 1 ¾ cups Powdered sugar
  • 2 tablespoons. Key lime juice
  • ½ teaspoon Vanilla extract
  • 3 tablespoons Heavy cream

Directions:

Preheat the oven to 325 degrees Fahrenheit. Grease a bundt pan and set aside.

Cream together the butter and sugar in the bowl of a stand mixer. Mix on medium speed for 2-3 minutes until light and creamy.

Add the eggs one at a time, then the vanilla extract and mix until fully combined.

Add the lime juice and zest and mix until combined.

In a separate bowl, add the flour, baking powder and salt. Whisk to combine.

Add half of the flour mixture to the wet ingredients, and mix on medium speed.

Add the sour cream to the mixture and continue to mix on medium speed.

Add the remaining flour and mix until fully combined.
