These Lemon Beehive Cupcakes are as delicious as they are stunning. A perfect additon to any party – they make a yummy treat for baby showers, themed birthdays, picnics and more!
Lemon Beehive Cupcakes
Makes 20-22 | Prep/Decorate: 40 minutes | Bake: 20 minutes
Ingredients:
1 1/2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup Vegetable Oil
1 cup granulated sugar
2 large eggs
1/2 cup whole milk
1/4 teaspoon vanilla extract
1 tablespoon lemon zest
1/4 cup lemon juice

Lemon Buttercream Ingredients:
3 ¾ cup confectioner sugar
1/3 cup butter, room temp
1 tsp lemon extract
1 tbsp lemon zest (or combine lemon and lime zest)
3-4 tbsp heavy cream
yellow food color
Instructions:
Sift together flour, sugar, baking powder and salt.
Add butter, lemon extract, and milk to flour mixture. Beat to combine.
Add egg whites to mixture and beat 2 minutes.
Scoop into cupcake paper cups to ¾ full.
Bake 350° for 20-22 minutes or until toothpick inserted in center comes out clean.
Allow to cool completely before decorating.
Blend all ingredients for buttercream frosting. Add yellow food color to desired tint.
Pipe frosting with desired decorating tip.
To create a beehive, first pipe a large dollop of frosting in the center of the cupcake, allowing it to create a little tower.
Pipe around the tower in a circular fashion until reaching the top.
