Tips for Making the BEST Oreo Truffles
- Do not over-mix or the mixture will become too loose and won’t hold together. Do not mix in your food processor.
- Do not skip chilling the oreo mixture as it helps the balls keep their shape when dipping them in the melts.
- Do not melt the candy melts or choolate until you are ready to coat the Oreo balls.
- Make sure to move quickly as the melts will begin to set fast.
- Always heat the melts on a low setting to help prevent it from seizing and clumping up.
- If your melts do seize up you can loosen it up with a little coconut oil or vegetable shortening stirred in until smooth.
How to Store Leftover Strawberry Shortcake Oreo Balls
Once you’ve made these delicious strawberry shortcake Oreo balls, you may have some leftovers.
To store them properly, it’s best to put them in an airtight container and keep them in the refrigerator because of the cream cheese filling.
Use layers of wax paper or parchment between the Oreo balls to separate the layers. You can also add a paper towel to the bottom of the container to help prevent condensation.
Can You Freeze Strawberry Shortcake Oreo Balls?
Yes, you can freeze strawberry shortcake Oreo balls. To do this, first make sure the Oreo balls are completely set before placing them in a single layer on a parchment-lined baking sheet.
Place the Oreo balls in the freezer for at least two hours or until they are frozen solid. Once frozen, transfer the Oreo balls to an airtight container or zip-top bag. Storing in a container is preferable as you can place waxed paper or parchment paper between layers to help prevent sticking.
Store in the freezer for up to three months. When ready to enjoy, remove from the freezer and let them thaw at room temperature before eating.
Equipment Needed to Make Oreo Balls
- 2 baking sheets
- Parchment paper
- Food processor or blender
- Large mixing bowl
- Hand mixer or stand mixer
- 1 ½ tablespoon cookie scoop
- Double boiler (or microwave)
- Piping bags
About the Ingredients for Strawberry Shortcake Oreo Balls
Oreos – Golden oreos are the best option to get an easy shortcake-like flavour that won’t overpower the strawberry flavour.
Strawberries – Do not substitute with fresh or frozen strawberries as the mixture will be way too wet. Freeze dried strawberries keep the mixture stiff enough to hold their shape and offers intense strawberry flavour.
Cream cheese – Use a block of cream cheese, avoid using light cream cheese or whipped cream cheese as they may affect the flavour and consistency. Strawberry cream cheese may add an added punch of strawberry flavour, however I have not tried this swap myself so do so at your own risk.
Candy melts – We used pink candy melts for the base coating, and Ghiradelli melting wafers for the drizzle but feel free to get creative.

How to Make Strawberry Shortcake Oreo Balls
Yields: 20 Oreo balls | Prep time: 45 minutes | Chilling time: 1 hour
Ingredients:
- 19.1 ounce family size package Golden Oreos, divided
- 1 ½ cup freeze dried strawberries, divided
- 8 ounce block cream cheese, softened at room temperature
- 12 ounce bag Wilton pink candy melts
- ½ cup Ghirardelli vanilla melting wafers
Directions:
Line two baking sheets with parchment paper and set aside.
Using a food processor or blender, pulse the golden oreo cookies until you have fine crumbs. Set aside ½ cup of crumbs for later to use as a topping.
In a large mixing bowl, beat the softened cream cheese until smooth.
Add the golden oreo crumbs and 1 cup of freeze dried strawberries to the bowl.
Mix on a low speed until evenly combined with a dough consistency.
Place into the refrigerator to chill for 30 minutes. This will help firm up the batter, making it easier to roll into balls.
Once chilled, use a 1 ½ tablespoon cookie scoop to scoop the batter into even sizes and roll them into balls with your hands. Place each ball onto the lined baking sheet. Chill in the refrigerator for another 30 minutes. This will help the balls keep their shape when dipping into the heated melting wafers.
Using a double boiler, heat the pink candy melts over low heat, stirring often, until fully melted.
Place a cookie ball onto a fork and dip it into the melts.
Tap the fork against the edge to remove the excess and thin out the coating. Place back onto the lined baking sheet and repeat with the remaining cookie balls.
Once all of the cookie balls are coated, place the vanilla melting wafers into a heat safe piping bag and microwave on a low or defrost setting in 30 second increments until fully melted. Massage the bag gently each time.
Snip a corner of the piping bag and drizzle over just a few of the cookie balls and then immediately top with Golden Oreo and freeze dried strawberry crumbs.
You’ll want to work in small batches so that you are able to top the cookie balls with crumbs before the drizzle sets.
Allow the coating to set completely before serving. You can place them back in the refrigerator to speed things up.
