How to Make the Most Delicious Strawberry Glaze

The best way to make a strawberry glaze that is full of sweet strawberry flavour is to use in-season sweet strawberries. Frozen will work in a pinch. California strawberries are OK. The best though is fresh, in-season, local strawberries.

Skip using strawberry jam altogether. I experimented with this method and it only results in a sickening sweet pink glaze devoid of actual strawberry flavour.

The next tip is not to thin out the glaze too much, I like my donuts with a thicker layer of glaze that will stick to the donuts without making them soggy. Carefully add the milk, do not add all at once!

The last tip is that you want to keep your strawberry puree a little rough so that you still get nice little surpise pieces of strawberries.

Fill your donut pan the easy way!

Add the batter to a large plastic bag, cut off a corner, then pipe the batter into the donut pan. Alternately use a piping bag if you have a reusable one.

This little trick makes filling the pan easy, mess-free, and quick.

There are two different types of donut: cake and yeast.

A cake donut is made with a sweetened dough that’s leavened with baking powder and fried until crispy on the outside with a soft, cakey inside.

Yeast donuts are your classic glazed donut, and as the name implies, made with a yeast dough. These are typically cut out into a shape before being frying.

Yeast donuts are typically light and airy, where cake donuts tend to be more dense.

Personally I prefer a cake donut, and they are a lot easier to make at home.

To make slightly more healthy cake donuts, we have baked ours instead of opting for frying.

How to Store Strawberry Cake Donuts

Leftover doughnuts can be stored in an airtight container at room temperature or in the fridge 2-3 days.

They also freeze well for up to 3 months when wrapped individually and stored in an airtight container. Thaw overnight in the fridge before serving.

How to Bake Donuts without a Donut Pan

If you don’t have a donut pan, don’t fret!

This doughnut batter is actually quite thick. Using a piping bag you could freehand your batter into rings on a parchment paper lined baking sheet.

Another option is to use a pastry bag to pipe a ring around the cavities of a greased muffin pan, or use a mini muffin pan to make “donut holes”.

Donuts might look a little cuter when baked in a doughnut pan, but they will still taste great no matter their shape. That said, silicone baking pans are really quite inexpensive and worth the small investment.

Equipment Needed to Make Baked Donuts

You don’t really need any special equipment but if you want them to come out like mine, this is what you need:

Silicone Baking Pans – I like the silicone pans a lot because they make it super easy to pop the donuts out.

You will also need mixing bowls, a wooden spoon, and a wire rack at minimum. An electric hand mixer or stand mixer will make easier work of this of course.

You may also find using piping bags to get he batter into the pans a lot easier than spooning the batter in.

Ingredients for the Strawberry Baked Doughnuts

Flour – Spoon and level the flour when measuring it, otherwise you’ll wind up with dense donuts.

Baking powder – To leaven the dough. Make sure it is still active.

Baking Soda – To leaven the dough. Make sure it is still active.

Salt – Helps to balance all the flavours and make em shine.

Egg – Make sure your egg is at room temperature before starting.

Sugar – Just use plain old granulated sugar. (Can also substitute with your favourite granulated sugar substitute.)

Milk – You can use any kind of milk here, I tested with 2% cows milk since that is what we usually have on hand.

Oil – You can swap with your favourite neutral oil, melted butter has great flavour but can leave your crumb a little dry. Try half butter and half oil for a moist donut with a little more flavour.

Vanilla extract – Use pure vanilla extract for the best flavour, but artificial is just fine too.

Strawberries – Fresh, local strawberries are best here. You can use frozen as well in a pinch, just don’t allow them to thaw out and do not overmix your batter unless you are going for very pink donuts.

Powdered sugar – You might call it confectioners sugar or icing sugar.

How to Make Baked Strawberry Donuts

Ingredients:

1½ cups All purpose flour
1 tsp Baking powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 Large egg
1/2 cup Granulated sugar
1/2 cup Milk
1/4 cup Vegetable oil
2 tsp Vanilla extract
1/2 cup Strawberries, chopped

For the Glaze:

1/4 cup Strawberries. pureed
1 tsp Vanilla extract
2 cups Powdered sugar
1 Tbsp Milk

Ingredients for strawberry baked donuts.

Directions:

Preheat the oven to 400F. Grease a donut pan well, and set aside.

In a small bowl, mix together the flour, baking powder, baking soda and salt.

In a large bowl, whisk together the egg and sugar until well combined. Mix in the milk, oil and vanilla.

Stir the dry ingredients into the wet ingredients, and mix until just combined.

Strawberries folded into donut cake batter,

Fold in the chopped strawberries.

Donut batter piped into a donut pan.

Spoon or pipe the donut batter into the prepared donut pan, filling each cavity 3/4 full.

Bake for 10-12 minutes or until golden brown and a toothpick inserted comes out clean.

Golden baked donuts on a wire rack.

Allow to cool for 10 minutes before transferring to a cooling rack.

In another bowl, mix the strawberry puree, vanilla, and icing sugar until well combined.

Glazed donuts on a cooling rack.

Whisk in the milk a little at a time, until the glaze is reaches your desired consistency.

Dip the donuts into the glaze, and leave to set on the cooling rack about 30 minutes before serving.
