Peach Crisp with Coconut & Ginger Crumble

This Peach Crisp is paired with an unlikely duo of Coconut and ginger in the crumble that actually work delightfully well together.

 

I love when local peaches are in season.  I love the sweet and mellow flavour of a perfectly ripe peach.  Something that is severely lacking in canned peaches.  This Peach Crisp is paired with an unlikely duo of Coconut and ginger in the crumble that actually work delightfully well together.

I prefer to keep the fruit in my crisps/crumbles free of spices but love to add them to the crumble instead and the coconut adds a hint of nuttiness while the ginger adds a nice dash of spice.

Peach Crisp with Coconut & Ginger Crumble

Ingredients:

8 Peaches, Peeled, Pitted and Sliced
1/4 Cup Brown Sugar
1 tsp Lemon Juice
2 tsp Cornstarch
1/2 Cup Flour
1/2 Cup Rolled Oats
1/2 Cup Brown Sugar
1/2 Cup Cold Butter, Cut into Small Pieces
2 tbsp Fresh Ginger, Chopped Finely
1/2 Cup Shredded Coconut

 

Directions:

Preheat Oven to 375 degrees F.

Mix Peaches, Brown Sugar, Lemon Juice and Cornstarch together in a medium Bowl and place in the bottom of a 2 qt baking dish.

In a large bowl mix together the remaining ingredients with your (clean!) hands.  The texture you are looking for is well combined but still quite lumpy.

Bake, uncovered for 30-35 minutes.

Serve Warm with Vanilla Ice Cream.

  1. I just love a Crumble dessert, Peach being one of my favourites. This is so easy to make and is so good!

    Speaking of Peaches, it is the Winona Peach Festival this weekend (22,23,24) going on now for 47 years.
