  • Balsamic Vinegar – Red wine vinegar, apple cider vinegar, or even lemon juice can be used if you prefer a tangier taste.

Halloween Caprese Salad

Yields: 6 Servings | Prep time: 10 Minutes | Cook time: 8 Minutes

Ingredients:

  • 8 oz (200 g) mini bocconcini, drained
  • 1 pint cherry tomatoes, halved
  • ¼ cup fresh basil
  • 2 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Directions:

Preheat oven to 350°F. Lightly oil a silicone skull mould.

Place one cheese ball in each cavity of the mould, then set it on a baking sheet.

Bake for 6-8 minutes, until the cheese softens (but does not melt).

Remove from oven and press each cheese ball firmly into the mould using a folded paper towel to absorb any liquid. Refrigerate for 10 minutes.

Carefully remove the cheese skulls. Repeat with remaining bocconcini balls.

Combine tomatoes, cheese skulls, and chopped basil in a serving bowl.

Whisk together olive oil, balsamic vinegar, salt, pepper, and dried oregano in a small bowl.

Pour dressing over the tomato mixture and toss well.

Refrigerate until ready to serve. Adjust seasoning as needed. Serve and enjoy!
