- Fondant can be prepared up to a month in advance. Store hardened fondant in an airtight container at room temperature.
- The green “slime” is ganache and it will remain goopy, it is meant to be that way.
- Make sure your brownies are completely cooled off before decorating.
- Place any leftovers in an air tight container in the fridge for up to 5 days.

About the Ingredients Needed for Brain Brownie Cups
Fondant – If you don’t like fondant you can use bright green candy melts or white chocolate instead.
Cornstarch – For dusting the fondant mould.
Food colouring – Gel food colouring is best as it can be very vibrant without changing the colour or texture.
Brownie mix – Use your favourite boxed mix or homemade brownie recipe. A box mix will make 20 mini cupcake sized brownies.
Chocolate chips – You can use bright green candy melts instead of the white chocolate chips, but I think the chocolate chips taste better.
Cream – You do need cream to make a good ganache, you can use milk instead but it won’t be as nice and rich.
Corn syrup – The corn syrup gives the fondant brains that slimy look.

How to Make Zombie Brain Brownie Bites
Yields: 20 Brownie Bites | Prep time: 1 hour | Cook time: 17 Minutes
Ingredients:
- ¼ Cup cornstarch
- 14 oz white fondant
- Neon green gel food colouring
- 1 box brownie mix
- 3 tablespoons water
- ½ Cup canola oil
- 2 large eggs, room temperature
- 1 Cup white chocolate chips
- ⅓ Cup heavy whipping cream
- 1 Cup corn syrup
Directions:
Remove the fondant from the package and dust hands with cornstarch.
Kneed the fondant until soft.
Make an indent in the centre of the fondant and add in a few drops of neon green gel food colouring.
Work the food colouring into the fondant until completely dyed.
Using the painting brush, dust the inside of a brain fondant mould with cornstarch.
Pinch off about 3 tablespoons of fondant and press into the mould.
Carefully remove the fondant from the mould and place onto a cookie sheet lined with a silicone mat.
Repeat steps for 19 more brains.
Allow the fondant brains to air dry overnight at room temperature.
Mix in a few drops of the neon green food colouring into the corn syrup.
Using the smaller brush, dip it into the corn syrup and gently brush it over the brains.
Set aside while you make the brownies.
Preheat oven to 350 degrees Fahrenheit and spray a mini cupcake pan with baking spray.
Follow the directions on the back of the brownie box to prepare.
Fill each cavity of the mini pan ¾ full.
Bake in the oven for 15-17 minutes or until a toothpick comes out clean. Allow to cool completely.
Using a small pot, bring the heavy whipping cream to a simmer.
Whisk in a few drops of the neon green food colouring.
Pour the hot cream over the white chocolate chips in a heat proof bowl.
Allow to sit for 2 minute before whisking until smooth.
Remove the brownies from the pan, poke a hole into the middle using the end of a wooden spoon.
Spoon 2 tablespoon of ganache into the centre of the brownies.
Carefully place the fondant brain in the centre over the ganache.
