Ingredients & Substitutions
Cucumbers – Persian cucumbers would work well here too. I would avoid using field cucumbers.
Honey – For sweetening. You could use a simple syrup here instead. Adjust the sweetness by adding more or less according to your taste.
Mint – Only fresh mint leaves.
Lime – Use fresh limes for best flavour. Bottled lime juice will work in a pinch.
Water – Ice water or very cold water is needed for blending everything together nicely.
Club soda – Club soda tops off these coolers with a refreshing fizz. You can substitute with flat water if preferred.

How to Make a Cucumber Mint Cooler
Yields: 6 Servings | Prep Time: 10 minutes
Ingredients:
- 2 medium English cucumbers
- 3 tablespoons honey
- 1 sprig fresh mint leaves
- 2 limes, zested and juiced
- 2 cups chilled water
- 2 cups club soda
- Cucumber strips and mint leaves for garnishing
Directions:
Shave 6 slices of cucumber (cut lengthwise) for garnishing. Keep the slices soaked in ice-cold water while preparing the coolers.
Chop the remaining cucumber into chunks, and add to a blender along with the honey, mint, lime zest and juice, and 2 cups of water. (Image 1) Blend until smooth.

Strain the mixture with a fine-mesh strainer into a large pitcher and discard the pulp. (Image 2)
Stir in the club soda.
Garnish glasses with prepared cucumber slice, then fill halfway with ice cubes. Fill with the cooler and garnish with sprigs of mint leaves.
Serve immediately.
