About the Ingredients for Brown Butter & Quinoa Peach Muffins
Milk – We use whole cows milk for baking but you can substitute with the milk of your choice.
Eggs – Always bake with room temperature eggs.
Vanilla extract – Pure vanilla extract is best but feel free to use artificial vanilla if that is what you have on hand.
Flour – Always spoon and level your flour to avoid dense muffins.
Sugar – Plain old granulated sugar is all you need, you can swap with the sweetener of your choice or use brown sugar instead.
Baking powder – Make sure your baking powder is still active so the muffins rise!
Salt – Brings out all the other flavours!
Quinoa – Quinoa is a great source of protein, antioxidants, fiber, iron and many other nutrients.
Peaches – Use fresh local peaches for the best flavour, you can also use frozen peaches. Do not thaw.

How to Make Browned Butter and Quinoa Peach Muffins
Yields: 12 Muffins | Prep Time: 15 mins | Bake Time: 22 Mins
Ingredients:
1/2 cup Butter
1/2 cup milk
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
3/4 cup granulated sugar
1 tbsp baking powder
1/4 tsp salt
1 cup Quinoa, cooked
2 cups fresh peaches, chopped
Honeyed Butter:
1 Cup Butter
1 tbsp Honey
1 tsp Vanilla Extract
Directions:
Preheat oven to 375 degrees F. Spray a muffin pan with nonstick spray. Set aside.
Melt the butter in a medium saucepan over medium heat. Allow the butter to fully melt and cook down until it starts to brown and froth. It will brown fairly quickly so keep an eye on it. When little brown bits appear in the pan remove from heat and set aside.
Whisk together the milk, egg and vanilla then stir in the brown butter until combined.
In a separate bowl mix together the flour, sugar, baking powder and salt.
Add brown butter mixture to the dry ingredients and combine well.
Gently fold in the peaches and quinoa.
Fill mufin tray so cups are 3/4 full. Bake for 20-22 minutes.
Cool in pan for 5 minutes before transferring to a cooling rack.
To make Honeyed butter,in a medium bowl whisk together butter, honey and vanilla until well combined.
Serve muffins with honeyed butter.
