As soon as local peaches become available I start buying baskets of them at a time. Fresh, local peaches are the best. Super sweet and ripe. I find when you buy ones shipped in that they tend to rot before they fully ripen but that is not the case with local peaches!
I store them at room temperature in muffin tins, that way if one does begin to rot, it doesn’t spread and ruin the other peaches.
Peach Delight is one of my favourite summer desserts, it’s so full of amazing flavour with both creamy and crunchy textures that perfectly complement the bright flavour of peaches.
How to Store Peach Delight
Whether you are making your Peach Delight ahead of time or putting away leftovers, it should be stored in the fridge tightly covered in plastic wrap or foil. (Or in an air tight container.)
Do not leave out for more than 2 hours because of the cream cheese.
You can store Peach Delight in the freezer in an air tight container for up to 2 months. Thaw out in the fridge overnight.
About the Ingredients for Peach Delight
Graham Cracker Crumbs – You can either crush graham crackers or buy the crumbs.
Butter – Salted butter is best here, and it needs to be melted.
Pecans – If you can’t find ground pecans you can either chop them finely with a knife or throw them in a food processor.
Cream Cheese – Full fat cream cheese at room temperature.
Powdered Sugar – Sifted if possible to prevent any lumps.
Peaches – Use only fresh peaches, and it’s best if you can use fresh local peaches.
Whipped topping – You can also use real whipping cream, whipped with a little sugar and vanilla extract if preferred.

How to Make Peach Delight
2 Cups Graham Cracker Crumbs
1 Cup Butter, Melted
1 Cup Pecans, Ground
2 (8 oz) packages Cream Cheese, softened
4 Cups Powdered Sugar
8 Fresh Peaches, Peeled & Sliced
1 (10 oz) Frozen whipped topping, thawed
Preheat oven to 350 degrees F.
Combine graham cracker crumbs, butter and pecans in a medium bowl.
Press the mixture into a 13 x 9 baking dish.
Bake 10-15 minutes, or until lightly browned, then set aside to cool.
In a medium bowl, stir together the cream cheese and powdered sugar until well combined and smooth.
Spread the cream cheese mixture over the cooled crust.
Cover with peaches and then spread over with the whipped topping.
Cover and chill for one hour before serving.
