Unicorn cakes have taken pinterest by storm but I had a hard time finding a recipe with simple, clear and easy instructions for a beautiful cake just the way I wanted it.

I made this one for my year 8 year old, Keira’s birthday earlier this year and everyone was absolutely stunned by this cake. Keira was absolutely in love with the cake, making at a real hit in my books!

As a kid, I would have absolutely adored having a Unicorn themed birthday party.

In fact my childhood best friend and I would spend hours and hours drawing unicorns, watching or playing with my little ponies and generally just obsessing over anything and everything unicorn.

Things haven’t changed much. Little girls still largely adore unicorns, which means a cake like this is sure to impress most.

 

 

Unicorn Cake with Rainbow Layers

Ingredients:

2x Vanilla Cake Mix + ingredients to make
Assorted Food Colouring
2x Vanilla Buttercream Recipe
Black gel icing
Sugar Cone
Sprinkles

Equipment:

Piping Bag
1M Piping Tip

Directions:

Preheat oven to 350°F.

Grease and line two 9-inch round cake pans with parchment paper.

Prepare one box of cake mix as described on the box.

Divide the batter in half evenly into two medium bowls.

Colour one batter red, and the other yellow using food colouring.

Pour each into their own prepared cake pan and bake according to instructions for 2x 9″ round cakes.

Repeat the above with the remaining cake mix along with green and blue food colouring.

Allow cakes to completely cool.

Meanwhile prepare 1 recipe of vanilla buttercream.

Level each cake carefully for stacking, reserving some of the sliced off cake for the ears.

Place the purple layer on the bottom and cover the top with a thick layer of buttercream.

Top with blue cake later and frost, then repeat with yellow and then red layers, finishing off with a layer of buttercream.

Spread a light coating of frosting all over sides of cake and smooth out.

Cut reserved cake pieces into two ear shapes and pierce the bottom with toothpicks  to help attach the ears to the cake. Lightly frost.

Frost sugar cone lightly and roll in sprinkles.

Refrigerate cake. ears and horn for 15 minutes.

Frost cake and ears with remaining frosting and smooth out as much as possible.

 

 

Carefully cover the inside of the ears with sprinkles as pictured.

Place the horn and ears onto the top of the cake.

Prepare another recipe of buttercream and divide between 4 small bowls.

Colour each bowl of buttercream the colour of your choice. I chose a blue, puprle, light pink and dark pink for mine.

Spoon one buttercream colour at a time into piping bag prepared with the piping tip.

 

 

Frost flowers onto the cake as pictured to create the mane. Spoon more frosting into the same bag to get gradient colours as you pipe the flowers. See picture.

Use the black food gel to pipe eyes onto the front of the cake.
