Tips for the BEST St. Patrick’s Day Meringue Cookies

  • Always start with room temperature egg yolks.
  • Older eggs actually produce fluffier meringue, so use old (but not bad) eggs.
  • Make sure you are using a clean bowl. The egg whites won’t foam up if there is even a drop of residue of grease in your bowl.
  • Don’t forget the cream of tartar, they stabilise the meringue!
  • The slower you add your sugar, the better it’ll dissolve into the whipped whites. We want a silky smooth texture, not a gritty one!
  • Check the weather. It’s best to make meringues on a dry day. On humid or rainy days, they can absorb moisture and you won’t get that nice crisp outside shell.

About the Equipment Needed to Make Meringue Cookies

You will want to use an electric mixer to make meringues. Either a stand mixer or a large bowl and a hand mixer works.

You will also want a sheet pan with parchment, a pastry bag, and a Wilton tip #21.

How to Store Meringue Cookies

Meringue cookies can be stored at room temperature for up to two weeks if properly stored in an airtight container. They also freeze well, just throw them in an airtight container once completely cooled, and freeze for up to 3 months. When ready to enjoy, thaw them at room temperature for a couple hours.

About the Ingredients for Meringue Cookies

Egg whites – It is really important that you start with room temperature egg whites. Warm egg whites are able to incorporate more air than cold egg whites, so they will whip up easier and nicer.

Cream of tartar – Cream of tartar helps to stabilize your meringue, don’t skip this ingredient. You can substitute with 1 teaspoon of lemon juice, although I find the cream of tartar does a better job.

Sugar – Just plain old granulated sugar, but you can substitute with a granular sugar alternative that measures 1:1 with regular sugar. Splenda or monkfruit sweetener is a good option here,

Food colouring – Gel food colouring is the best way to colour meringues without affecting the texture. Don’t go crazy though!

White candy melts – You can substitute with real white chocolate if you don’t mind more of a creamy, off-white look. If going the sugar free route then use sugar free white chocolate.

M&M’s – You can substitute with any other similar green candies or just use the green decorating frosting to draw the clovers on.

Frosting – We use just a bit of green frosting for the stems.

St. Patrick’s Day Meringues

Yields: 12 Servings | Prep time: 20 Minutes | Cook time: 2 hrs 40 minutes

Ingredients:

  • 2 egg whites, room temperature
  • ¼ tsp cream of tartar
  • ½ cup granulated sugar
  • 1 drop Kelly green gel food coloring
  • ¾ cup white candy melts
  • 36 Green M&Ms
  • Green decorating frosting

Directions:

Preheat oven to 200 degrees Fahrenheit.

Line a baking sheet with parchment paper and set aside.

Using a stand electric mixer, start beating egg whites and cream of tartar on low.

Slowly add granulated sugar and increase mixer’s speed to high. Beat for at least 10 minutes or until stiff peaks start to form.

Add green gel food coloring and beat until tinted. One small drop (about one third of ¼ teaspoon) should result in a light green color.

Scoop meringue into a piping bag with Wilton tip #21 attached.

Pipe out circular meringue cookies on lined baking sheet, about 2 inches in diameter.

Once circles are piped out, pipe out a second layer around the circumference to create a cavity in the center.

Bake for 2 hours.

Once time is up, turn off the heat but keep the meringue cookies in the oven for an additional 35 to 40 minutes.

Remove from oven and allow to cool for 5 minutes.

Place candy melts in a bowl and microwave in 30-second intervals until completely melted, making sure to stir between each interval.

Place 3 M&Ms on the melted candy, in a triangular shape to make it look like a clover (ie.: one M&M centered and two just below, on either side of the centered M&M)

Refrigerate the filled meringue cookies for about 15 minutes.
