Sweet Potato Chili


Now that we are in the thick of Autumn I am beginning to crave heartier meals for dinner.  One of my favourite cold weather meals is Chili.  There is nothing better than a big steamy bowl of  spicy chili to warm you from the inside out.  The sweet potato chunks in this recipe add a nice touch of fall to create a new family favourite.

Ingredients:

    1 lb ground beef
    1 large onion, chopped
    2 tbsp chili powder
    1 tbsp ground cumin
    
1/2 tsp cayenne (or to taste)    
    1/2 tsp salt
    1/4 tsp black pepper
    3 large sweet potatoes, peeled and cubed (roughly 1″)
    2 cloves garlic, minced
    19 oz can kidney beans 
    
    2x 28 oz can diced tomatoes (Do not drain)

Directions:

Brown Ground Beef in Large Stock Pot with onions.  Add the rest of the ingredients and stir. Turn down low and cover.  Allow to Simmer, covered, for 2-3 hours (or more) stirring occasionally. 

If you have a (large) slow cooker you can throw all the ingredients in at once and cook on low for 10 hours.

 Serves: 6

    1. You know, I thought it would make it a little sweeter but instead it seems to just make it thicker and heartier. Even a big chunk of sweet potato in it just tastes like the spices. Perhaps cutting the spices in half would make a difference, but I like spicy chili so… 🙂

      Either way it is super yummy and goes fast in my house!
