Sheet Pan Cajun Sausage and Sweet Potatoes is one of those dinners I come back to again and again when time and energy are both running low. It’s the kind of meal where everything gets tossed into one bowl, spread onto a single pan and left to do its thing in the oven, which is exactly what I want on a busy weeknight.

The smoked sausage adds plenty of flavour on its own, the sweet potatoes roast up tender with lightly crisp edges, and the homemade Cajun seasoning ties everything together without being complicated.

It’s filling, family-friendly and easy to adjust based on what vegetables you have on hand, making it a reliable go-to for nights when you just need dinner to work.

  • Big Cajun flavour: Homemade Cajun seasoning packs smoky, spicy punch in every bite.
  • One-pan wonder: Toss, roast, done — minimal prep and zero stress.
  • Perfectly roasted veggies: Sweet potatoes, peppers, onions, and green beans caramelise to perfection.
  • Weeknight hero: Quick, easy, and keeps dinner drama-free.
  • Totally adaptable: Swap sausage or veggies, or double it for meal prep magic.

Tips for the Best Results

  • Cut the sweet potatoes into evenly sized pieces so they cook through in the same time as the sausage.
  • Toss everything together in a large bowl before roasting to evenly distribute the oil and Cajun seasoning.
  • Spread the ingredients out in a single layer; overcrowding the pan will cause steaming instead of roasting.
  • Roast on the middle rack for even cooking and good browning.
  • For crispier edges, switch the oven to broil for the last 1–2 minutes, keeping a close eye on it.

Ingredients and Substitutions

  • Smoked sausage – Pork, turkey or chicken sausage all work well.
  • Sweet potatoes – Regular potatoes or butternut squash are good alternatives.
  • Green beans – Broccoli, Brussels sprouts or cauliflower can be used instead.
  • Bell pepper – Any colour works; use what you already have on hand.
  • Red onion – Yellow or white onion can be substituted.
  • Olive oil – Any neutral cooking oil can be used.
  • Cajun seasoning – Homemade seasoning gives the best flavour, but a store-bought blend will work if needed. Adjust the amount used according to your own preferences. I like well-seasoned food so 2 tablespoons is a good starting point for us.
