This comforting chicken tortilla casserole features chicken, cheese and salsa for a mouthwatering family dinner.

This casserole is a great way to enjoy Mexican inspired flavors any night of the week.
It’s also a perfect make ahead meal for busy weeknights since it freezes really well.

How to freeze the Chicken Tortilla Casserole
Cover the cooled – baked casserole tightly with plastic wrap. Then Freeze.
Thaw in refrigerator overnight.
Remove from refrigerator for 1 hour before baking.
Preheat oven to 350° then bake casserole as directed, increasing time as necessary to heat through, should be about 45 minutes.

About the Ingredients for the Cheesy Chicken Tortilla Casserole
Chicken – I usually cook my own, but you could totally shred or chop up a rotisserie chicken.
Miracle Whip – Adds a bit of creamy zip.
Flour – All purpose flour, to thicken the sauce.
Cheese – An old cheddar works best but I mean a pepper jack could be nice here too.
Salsa – The salsa adds so much flavour to the dish. Select a chunky salsa with the heat you are looking for.
Cilantro – or not. Feel free to omit if you are like me and hate it.
Tortillas – Flour or corn tortillas. Your preference.

Cheesy Chicken Tortilla Bake
adapted from Kraft
Ingredients:
1/2 Miracle Whip Light
1/2 flour3 cups milk
2 cups shredded cheddar cheese
4 boneless chicken breasts cooked and cubed
1 cup salsa (hot salsa for spicy, mild salsa for slightly tangy)
2 tbsp chopped cilantro
16 small tortillas – or 8 large tortillas
Directions:
Heat oven to 375F.
In a medium saucepan place Miracle Whip, flour gradually stirring in milk. (CAUTION: mixture will lump if not whisked quickly while adding milk)
Once thickened (approx. 5 mins) add 1.5 cups of cheese, cook until melted.
Take 1 cup of sauce out and set aside.
Add cilantro, chicken and salsa to saucepan.
Fill each tortilla with mixture – fold in ends and roll.
Place in baking dish seam side down.
Once all are filled and rolled pour reserved 1 cup of sauce over tortillas, top with 1/2 cup shredded cheese.
Bake 25 minutes or until golden brown and heated through.
