Tips for Making the BEST Rocky Road

Stir your Chocolate – Between bursts in the microwave be sure to stir your chocolate. This will help prevent any burning and evenly distribute the heat.

Use the double boiler method – You can also melt your chocolate in a double boiler.

Bring to Room Temperature – Rocky Road can be hard to cut straight out of the fridge, try bringing the slab to room temperature and then slicing it up into squares.

Swap the Golden Syrup – If you don’t have golden syrup on hand try one of the following substitutions: corn syrup, honey, cane syrup, brown rice syrup, agave, or maple syrup.

How to Store Rocky Road

Rocky Road can be stored, in an airtight container, at room temperature for about a week. or it can be stored in the refrigerator for about two weeks.

You can even make it ahead and store in an airtight container for up to a month in the freezer.

You can thaw in the refrigerator overnight, or even just eat them frozen. Try them in the summer straight out of the freezer for an incredible cooling treat!

How to Make Rolo Rocky Road

Makes: 16 Squares | Prep Time: 20 mins | Cook Time: 5 mins

Ingredients

12 oz (300g) milk chocolate
8 oz (200g) dark chocolate
1/3 Cup (100g) golden syrup
1/2 Cup (125g) unsalted butter
2 1/2 Cup (125g) mini marshmallows
2 Cups (200g) graham cracker crumb
2 Cups (400g) rolos

Instructions

Grease and line a 9” square baking tin.

Break the milk and dark chocolate into squares and microwave in 30 second bursts until completely melted. Set aside to cool.

Cut the butter into chunks and add to a saucepan with the golden syrup. Melt together over low heat. Set aside to cool.

Place the graham cracker crumbs into a large mixing bowl. Add the mini marshmallows and 1 1/2 Cups (300g) of the rolos. Mix together with your hands.

Pour in the melted butter/syrup mixture, followed by the melted chocolate. Mix with a wooden spoon until well combined.

Transfer the mixture to the lined baking tin and make sure it’s spread out evenly.

Push the remaining rolos onto the top.

Refrigerate until completely set – about 4-5 hours.

Slice into 16 squares and store in an airtight container at room temperature. It will keep well for up to a week.
