Flour – Spoon and level the flour when measuring it, otherwise you’ll wind up with a dense cake.

Baking powder & soda – Leavens the cake, make sure they are still active so your cake rises perfectly.

Salt – Helps to balance all the flavours and make em shine.

Nutmeg – Helps to bring out the Eggnog flavour.

Butter – I normally like to use oil in my cupcakes as it usually results in a more tender and moist cupcake, but the richness of the butter really brings out the flavour of the Eggnog. You need to use softened butter so that it creams nicely.

Sugar – Just plain white granulated sugar.

Vanilla Extract – Use pure vanilla extract for the best flavour, but artificial is just fine too.

Eggnog – You can use homemade eggnog or your favourite store bought Eggnog.

Eggs – Make sure your eggs are room temperature before starting.

Butter – It is best to use unsalted butter and then add salt for the best flavour. That said, I often make cupcakes with what I have on hand, and that is generally salted butter and that works well too. Just omit the additional salt.

Powdered sugar – Also known as icing sugar or confectioners sugar. You can make your own by throwing granulated sugar into a blender or food processor until powdery.

Eggnog – You can use homemade eggnog or your favourite store bought Eggnog.

Extract – If you want your cupcakes to have a bit of an adult edge to them, use rum extract. Otherwise you can use pure vanilla extract for the best flavour, but artificial is just fine too.

Nutmeg – Ground nutmeg. You could use cinnamon instead here if you like.

Sprinkles – For a little extra fun, use some vibrant sprinkles on top!

Stand Mixer – A stand mixer makes life so much easier when it comes to baking. You can use a large bowl and a whisk or hand mixer, but an electric mixer is life changing.

Cupcake Liners – I used foil lined cupcake liners for these that I bought last year, I can’t find similar on Amazon this year but these red foil cupcake liners will stay bright and still look pretty and festive.

How to Make Eggnog Cupcakes with Eggnog Buttercream Frosting

Yields: 24 Cupcakes | Prep time: 10 Mins | Cook time: 22 Mins

Ingredients:

  • 3 Cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp nutmeg, ground
  • 1 Cup unsalted butter, softened
  • 2 Cup sugar
  • 3 tsp pure vanilla extract
  • 1 ¼ Cups eggnog
  • 4 large eggs, room temperature

For the Eggnog Buttercream:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ Cup Eggnog
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon rum extract OR Vanilla extract
  • Pinch of salt
  • Sprinkles or Additional nutmeg

Directions:

Preheat oven to 350 degrees F. Line a muffin tin with cupcake liners and set aside.

Putting the dry ingredients in a large bowl.

Sift the flour, baking powder, baking soda, salt, and nutmeg into a large bowl.

Mixing together the dry ingredients.

Mix until well combined in your large mixing bowl.

Mixing the eggnog into the butter and sugar.

In the bowl of a stand mixer, cream the butter and sugar.  Add the vanilla, and eggnog until well combined, It’s ok if it separates a bit.

Mixing in one egg at a time.

Beat in the eggs one at a time.

The batter mixed together.

Gradually mix in the dry ingredients until just combined, being careful not to over mix.

Fill the prepared muffin tins with cupcake batter, about 2/3 full.

Place into the oven and bake for 20-22 minutes or until a toothpick comes out clean when inserted into the middle of one of the cupcakes. Set aside to cool.

Using a stand mixer with the whisk attachment, beat the butter until it turns white and creamy.

Sprinkle the cupcakes over either with holiday sprinkles or a light dusting of ground nutmeg.
