Rotel – The can of Rotel can be substituted with a 14-ounce can of diced tomatoes. Fire-roasted tomatoes are best. For my fellow Canadians, if you can’t find Rotel at your local grocer then you can also get it from Amazon at a reasonable price.

  • 1 (10-ounce) can diced tomatoes and green chiles (Rotel)
  • 1 (15-ounce) black beans, drained and rinsed
  • 1 ½ cups frozen corn
  • ½ cup sour cream
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 1 (32-ounce) bag tater tots

Directions:
