This Brownie & No Bake Cheesecake Christmas Sundae is the perfect way to celebrate the holidays. It is completely kid friendly – Picky eaters will love it!
Brownie and No Bake Cheesecake Christmas Sundae
BROWNIE RECIPE
Ingredients:
- 1/2 cup unsalted butter, melted
- 1/2 cup unsweetened cocoa
- 1/2 cup all-purpose flour
- 1 cup granulated sugar
- 2 eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon Kosher salt
Directions:
Preheat oven to 350 and butter, grease or coat with non-stick spray a 9 “x 9” pan.
- Combine melted butter and unsweetened cocoa in a bowl and whisk until butter and cocoa are incorporated.
- Add granulated sugar and mix
- Add eggs one at a time making sure egg is completely mixed before adding the next egg.
- Next, add flour, Kosher salt, and pure vanilla extract until flour in completely mixed and you can no longer see the flour.
- Spread evenly in a prepared pan and bake for 25 minutes or until a toothpick when inserted in the center comes out clean.
- Remove from oven and cool, set aside.
NO BAKE CHEESECAKE FILLING
Ingredients:
- 14 oz sweetened condensed milk, I prefer Borden’s
- 8 oz sweetened whipped cream, I used Cool-Whip
- 1/3 cup lemon juice
- 8 oz cream cheese, softened, I used Philadelphia Cream Cheese
Directions:
- In a mixing bowl of a stand mixer with a whisk attachment combine sweetened condensed milk, whipped cream, and cream cheese. Mix on low speed until all ingredients are combined
- Add lemon juice and mix for about 1 minute
- Set aside.
You will also need the following
- 2 Candy Canes, crushed
- Red Food Coloring
- Green Food Coloring
- 4 Trifle Dessert Glasses
Assemble:
- Squeeze 2 – 3 drops of red food colouring into the bottom of trifle glass. Swirl around making sure to get some red food coloring on the lower inside of trifle glass.
- Spoon in 2-3 tablespoons of no bake cheesecake cream.
- Add crumbled brownie
- Spoon in another layer of no-bake cheesecake cream.
- Add 2-3 drops of green food colouring.
- Top with a small amount of brownie and crushed candy cane.
- Serve.
