Why Did My Cookie Cups Turn Out Puffy?

If your cookies have been turning out puffy and fluffy whenever you make them, and you’re worried that these might turn out in the same way, here’s your way out!

Make sure you don’t beat the eggs too much, and don’t incorporate too much egg into the batter.

When you’re creaming sugar and butter together, beat it until it is just combined well and that’s it.

Can I Make Cookie Cups if I Don’t Have Baking Powder?

If you’ve run out of baking powder and are wondering if it is still possible to make these without you needing to take a quick trip to the supermarket, well, yes!

The only downside is that the cookies (in this case, cookie cups) will turn out more dense and flat than they should be.

To avoid this, make your own baking powder using baking soda and cream of tartar. One part baking soda plus two parts cream of tartar makes baking powder.

Cookie Cup Filling Variations

If you’ve nailed the cookie cups, and want to experiment a bit with fillings- go do it!

You could use a citrus jam or another berry jam or compote.

If you don’t have cream cheese for the cheesecake filling you could also try filling it up with some lemon curd or chocolate mousse.

Of course, there’s Nutella always to the rescue!

Cookie Cup Topping Ideas

These cheesecake cookie cups are incredibly versatile- you can decorate them pretty much any way you like.

Sliced strawberries on the top (if they’re in season) can look amazing!

If you’re a fan of sprinkles, you could drop them over the top or roll them on the sides of the cookie cups!

White chocolate chips can also go well with these cookie cups.

Serving Ideas & Suggestions

While these cookie cups taste amazing as is, you can still play with them a bit and take them up a notch!

Serve them warm alongside a scoop of vanilla or strawberry ice-cream and a drizzle of strawberry sauce on the top!

How to Store the Cookie Cups

The best part about cheesecakes (and these cookie cups) is that you can make them in advance.

So if you’re planning to whip these up as a quick dessert for some guests you’re entertaining, you can totally work that out easily!

All you need to do is batch make them, pop them in the freezer, and then get them out when you want to serve them. Thaw them in the refrigerator overnight.

Ideally, you should make them a day in advance and refrigerate them- they can stay good there for up to a week! Just make sure you store them in an airtight container.

How to Freeze the Cookie Cups

The unfilled or filled cookie cups can both be frozen, but personally I would only freeze the unfilled cups to avoid freezer burn.

Simply allow unfilled cups to completely cool then freeze in an air tight container. Wrap them individually so they don’t stick together.

If frozen unfilled they can be stored for up to 3 months.
