Tips for Success

  1. Don’t Overbake: Keep a close eye on the cookies. They should be lightly golden at the edges and set on top. Overbaking can make them dry.
  2. Room Temperature Ingredients: Using room temperature eggs ensures a smoother dough that mixes evenly.
  3. Mix-Ins: Customize the cookies by swapping or adding mix-ins like white chocolate chips, dried fruit, or butterscotch chips.
  4. Consistency: The dough will be thicker than traditional cookie dough. Use a cookie scoop or lightly greased hands to form balls for uniformity.
  5. Cooling: Allow the cookies to rest on the baking sheet for a couple of minutes before transferring them to a wire rack to prevent breaking.

Ingredients and Substitutions

  • Vanilla Cake Mix: Acts as the base for the cookies, providing sweetness and structure. Substitute with any flavour of cake mix like chocolate or spice for a twist.
  • Eggs: Helps bind the ingredients. For a vegan alternative, use flaxseed eggs (1 tablespoon ground flaxseed + 2.5 tablespoons water per egg).
  • Oil: Adds moisture and richness. Can be replaced with melted butter or coconut oil for a different flavour profile.
  • Semisweet Chocolate Chips: The classic choice for chocolatey goodness. Swap with milk, dark, or white chocolate chips, or use chunks for variety.
  • Walnuts: Adds crunch and a nutty flavour. Replace with pecans, almonds, or leave out for a nut-free version.
