Oil – Olive oil or any other neutral flavoured oil.

Chicken – Boneless skinless chicken breast. Be sure to bring it out of the fridge about 20-30 minutes prior for even cooking.

Seasoning – Use store bought or homemade cajun seasoning (recipe above & included in recipe card notes.) Cajun spice may also be called Blackening seasoning depending on where you live.

Garlic – Fresh garlic is best, you can substitute with a little garlic powder.

Onion – Yellow or white onion.

Peppers – Use different coloured peppers. I used green and red but you could use orange or yellow instead.

Sausage – Andouille sausage is best, but if you can’t find it then chorizo is an OK substitute. If you want to cut down on the spice, substitute with kielbasa or smoked sausage.

Butter – Real salted butter adds a load of flavour. Don’t be substituting for anything. Just omit rather than completely ruining the sauce with margarine or something else.

Cream – Heavy whipping cream here for best flavour. You can substitute with any type of unsweetened milk and a tablespoon of cornstarch, but without the fat, the sauce won’t be quite as tasty.

Pasta – You can use any type of pasta you like but bow ties, penne, or rotini are best in my opinion.

Cheese – Freshly grated parmesan cheese is best here, avoid grated packaged parmesan, it won’t melt as nicely and has a slightly different flavour from fresh.

Optional – You can finish this dish off with a little red pepper flakes for some extra heat and serve with garlic bread.

Note: If you want to thin the sauce before serving, reserve about a cup of the pasta water and stir into the final recipe, one tablespoon at a time, until you achieve your desired thickness.

Ingredients:

  • 3 tablespoons olive oil
  • 4 chicken breasts, thinly sliced
  • 2 tablespoons cajun seasoning
    4 cloves garlic, chopped
  • 1 medium onion, chopped
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 lb Andouille Sausage, sliced
  • 1/4 cup Butter
  • 2 cups heavy cream (480 mL)
  • 4 cups farfalle pasta (Bow tie pasta) (800 g), uncooked
  • 1 cup parmesan cheese (55 g)
  • ¼ cup fresh parsley (10 g)

Directions:

Cook pasta according to package instructions until al dente. Drain, and set aside. Do not rinse.

Place the chicken in a medium bowl and season with salt, pepper, and the cajun seasoning. Stir to coat.
