Tips for Best Results

  • Donโ€™t skip the lemon zest. Most of the lemon flavour comes from the zest rather than the juice alone.
  • Donโ€™t over-marinate the chicken. Thirty minutes is plenty for this lemon-based marinade. Longer marinating times can affect the texture of chicken breasts and make them slightly stringy.
  • Pound thick chicken breasts to an even thickness so they cook evenly and stay juicy.
  • Use an instant-read thermometer and cook the chicken to 165ยฐF (74ยฐC) for the best texture.
  • Let the chicken rest for 5 minutes after cooking to allow the juices to redistribute.
  • Reserve fresh thyme for garnish. Dried thyme works best in the marinade, while fresh thyme adds a beautiful finish after grilling.
  • Oil the grill grates before cooking to help prevent sticking.

Ingredients & Substitutions

  • Boneless Skinless Chicken Breasts โ€“ The original choice for this recipe, but the marinade also works beautifully with chicken thighs, drumsticks, or bone-in chicken pieces.
  • Lemon โ€“ Fresh lemon provides both the juice and zest that give this chicken its bright flavour. Bottled lemon juice wonโ€™t deliver the same result.
  • Vegetable Oil โ€“ Helps carry the flavours of the marinade and keeps the chicken moist while cooking. Canola oil, avocado oil, or another neutral oil work well too.
  • Honey โ€“ Adds a touch of sweetness that balances the acidity of the lemon. Maple syrup can be substituted if preferred.
  • Garlic โ€“ Fresh garlic provides the best flavour. Feel free to increase the amount if youโ€™re a garlic lover.
  • Ground Thyme โ€“ Adds earthy herb flavour that pairs perfectly with lemon and chicken. Dried thyme works best for the marinade.
  • Salt and Pepper โ€“ Essential for seasoning and enhancing all the other flavours.

    1. My husband is the worlds must finicky eater couple that with his allergy to onions and garlic it’s tough. I subbed powder garlic for gloves, ( the enzyme in fresh or cooked is what he can’t process) He said this can go on the rotation. Good enough to have with company too.
