Grilling Season might be almost coming to an end, but there are recipes meant for the grill that get made throughout the year in our home.
We have an indoor grill now but sometimes I “grill” this chicken in the oven with a baking sheet and cooling rack just to satisfy my cravings for this simple lemon and herb dish.
This recipe for Lemon-Thyme Chicken is a favourite bbq recipe in both my own home and at my parents.
If you don’t have a grill, this recipe can easily be broiled. Serve with fried rice and veggies for a delicious meal that will definitely get put into rotation with your own family!
About the Lemon Thyme Chicken Ingredients
Lemon – Use fresh lemon as you will want the zest for the best lemon flavour.
Oil – Use vegetable oil as it can withstand the high heat from grilling. Helps to keep the chicken moist.
Honey – Balances out the lemon just enough without making the marinade sweet.
Garlic – I call for 2 cloves but that is AT MINIMUM. I’m pretty heavy handed with garlic so usually throw in at least double that.
Thyme – Use ground thyme for best flavour. Fresh thyme will get bitter on the grill. Finish off your chicken with fresh thyme if you like after it is off the heat.
Chicken – I love boneless skinless chicken breast but this works well with whole chicken, bone-in skin-on chicken, chicken thighs, you name it. The marinade is perfect for any cut of chicken. Simply adjust your cooking time accordingly.

Stir finely grated lemon peel and 2 tbsp lemon juice with oil, honey, garlic and seasonings.
Pour the marinade over the chicken and leave at room temperature, covered, for 30 minutes.
