Cajun Turkey Breasts with Gravy
Enjoy tender, juicy Cajun turkey breasts with rich, savoury gravy – perfect for an easy weeknight dinner or a smaller holiday meal.

These Juicy Cajun Turkey Breasts with Gravy are a flavour-packed twist on classic roast turkey.
Seasoned with a bold Cajun spice rub and oven-roasted to perfection, the turkey turns out moist and tender every time. A quick, savoury gravy made from the pan drippings adds the perfect finishing touch.
Ideal for smaller holiday gatherings or a fuss-free Sunday roast, this recipe is simple enough for any day of the week yet special enough for entertaining.

Tips for Best Results
- Use a meat thermometer. Boneless turkey breasts can dry out quickly if overcooked. Remove them from the oven as soon as they reach 74°C (165°F).
- Rest before slicing. Allowing the turkey to rest for 10 minutes keeps it juicy.
- Adjust spice levels. Reduce cayenne for milder flavour or increase it for extra heat.
- Make-ahead option. The spice rub can be applied to the turkey up to 24 hours in advance and stored in the fridge.
- Smooth gravy. Whisk continuously while slowly adding broth to the roux to prevent lumps.

Ingredients and Substitutions
- Turkey breasts – Boneless, skinless (about 500 g each). You can also use bone-in breasts, adjusting cook time accordingly.
- Olive oil – Helps the spice rub stick and promotes browning. Substitute with avocado oil or melted butter.
- Paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, salt – The base of the Cajun flavour. Adjust cayenne to taste.
- Low-sodium chicken broth – Forms the base of the gravy. Turkey or vegetable broth can also be used.
- Unsalted butter – Adds richness. Can substitute with margarine.
- All-purpose flour – Thickens the gravy. For gluten-free, use a gluten-free flour blend.
- Pan drippings – Enhances flavour.

Cajun Turkey Breasts with Gravy
Yields: 4-6 servings | Prep time: 10 minutes | Cook time: 35–45 minutes
Ingredients
For the Turkey:
- 2 boneless, skinless turkey breasts (about 500 g each)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper (adjust to taste)
- ¼ teaspoon black pepper
- ½ teaspoon salt
For the Gravy:
- 1 ½ cups low-sodium chicken broth
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- Drippings from the roasting pan
- Salt and pepper, to taste

Directions

- Season the turkey. Pat the turkey breasts dry with paper towels. Rub the Cajun mixture evenly over all sides of the turkey. (Image 2)
- Roast. Place the turkey breasts in the prepared baking dish. Roast uncovered for 35–45 minutes, or until the internal temperature reaches 74°C (165°F). If there are any juices in the pan after roasting, reserve them for the sauce.
- Rest. Transfer the turkey to a cutting board and loosely cover with foil. Let rest for 10 minutes before slicing.
- Make the gravy.
- In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly to form a roux.
- Slowly whisk in the chicken broth and any turkey drippings. Simmer for 5–7 minutes, stirring often, until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Serve. Slice the turkey breasts and drizzle with the warm Cajun gravy.
