Cajun Turkey Breasts with Gravy

Ingredients

For the Turkey:

  • 2 boneless, skinless turkey breasts (about 500 g each)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon salt

For the Gravy:

  • 1 ½ cups low-sodium chicken broth
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • Drippings from the roasting pan
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 200°C (400°F). Lightly grease a baking dish.
  2. Mix the Cajun rub. In a small bowl, stir together the paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, salt, and olive oil. (Image 1)
  3. Season the turkey. Pat the turkey breasts dry with paper towels. Rub the Cajun mixture evenly over all sides of the turkey. (Image 2)
  4. Roast. Place the turkey breasts in the prepared baking dish. Roast uncovered for 35–45 minutes, or until the internal temperature reaches 74°C (165°F). If there are any juices in the pan after roasting, reserve them for the sauce.
  5. Rest. Transfer the turkey to a cutting board and loosely cover with foil. Let rest for 10 minutes before slicing.
  6. Make the gravy.
    • In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly to form a roux.
    • Slowly whisk in the chicken broth and any turkey drippings. Simmer for 5–7 minutes, stirring often, until the sauce thickens slightly.
    • Season with salt and pepper to taste.
  7. Serve. Slice the turkey breasts and drizzle with the warm Cajun gravy.
