Turkey and Sweet Potato Wonton Cups

 Turkey Sweet Potato Wonton Cups

 I love appetizers that could easily work as a light meal.  These Turkey and Sweet Potato Wonton Cups are deliciously different and provide a satisfying crunch. 

Turkey and Sweet Potato Wonton Cups

Ingredients:

1 lb ground turkey breast
1Tbsp coconut oil
1 large or 2 medium sweet potatoes, cut into ½ inch dice
½ tsp salt
¼ tsp pepper
3 cloves garlic
3 Tbsp soy sauce
2 Tbsp orange juice
¼ cup water
24 wonton wrappers
1 lemon {optional}

 

Instructions:

Preheat oven to 350 degrees. Layer two wonton wrappers in a muffin cup ensuring cup is covered.   Repeat for remaining 11 muffins cups.

Heat coconut oil over medium heat. Saute onion and garlic. Add turkey and cook, stirring to crumble until done. Season with ½ tsp salt and ¼ tsp pepper.

 Add soy sauce and orange juice. Add sweet potatoes and ¼ cup water. Bring to simmer and cook until sweet potatoes are fork tender.

 Spoon mixture into prepared wonton cups. Bake in preheated oven for 15 minutes or until wontons begin to brown. Remove from oven and squeeze lemon juice on top.
