Lemon Butter Asparagus

 Lemon Butter Asparagus is a delicious way to prepare Asparagus - even the most avid asparagus haters will love this one!

 I really love Asparagus, it has a flavour that just makes me think of spring sunshine.  A few years ago I was playing around in the kitchen and just had this craving for asparagus and lemon so I came up with this recipe.  I was a little surprised when researching the post title to find lots of other people had already came up with the same or similar.  Oh well!  I guess lemon and asparagus were just meant to be together.   

The lemon brings a bit of tang to the asparagus and I think it really accentuates that “green” flavour asparagus has.  I can almost guarantee that even those of you out there who are not fans of asparagus will be fans of this lemon butter asparagus!

Lemon Butter Asparagus

Ingredients:

1 Bunch Asparagus
1/2 Lemon Zested and Juiced
1 Tbsp Butter

 

Directions:

Prep Asparagus by washing and then snapping off the tough ends.  Simply bend the asparagus and it should snap right where its starting to get tough.

Place Asparagus in a skillet filled halfway with water and bring to a boil.  Once at a boil cook asparagus for about 1 minute longer until it is tender but still quite crisp.  Nobody likes mushy asparagus.  Then drain.

Lemon Butter Asparagus Prep

Return the asparagus to the skillet and toss with butter, lemon rind and lemon juice.

  1. I’m the asparagus fan in the house! i don’t make it often since I’m the only one that will eat it. I will have to try this though as everyone here is a big fan of lemon pepper, lemon chicken… just about anything lemon. Thank you girlie!
