 This creamy loaded potato soup couldn’t be any easier to make. No peeling or boiling potatoes, and no running it through a blender either. In fact this delicious soup cooks up in 4 minutes using just your microwave! Perfect for a cold winter day when all you want to do is cozy up under a blanket with a hot meal in hand.

For this recipe I used one of the CorningWare Meal Mugs I was sent to try out, and aside from your microwave and a fork, it’s the only tool you’ll need to serve this up. The meal mug even comes with a BPA-Free vented lid that allows steam to escape, so your microwave stays clean should you need to reheat your soup.

Loaded Potato Soup in a Mug

20-oz 592ml Corningware Meal Mug

Ingredients:

1 Cup Sodium reduced chicken broth
2/3 Cup instant potato flakes
1/4 tsp Garlic powder
1 Cup Milk
Salt & Pepper to taste
Shredded Cheese
Sour Cream
Ready-to-eat real bacon bits
Chopped Green onions

Directions:

Microwave the chicken broth in the mug on high for 2 minutes, or until boiling.

Use a fork to whisk in the potato flakes, garlic powder and milk until smooth.

Season with salt and pepper to taste.

Microwave on high for about 45 seconds, or until hot but not bubbling.

Top with cheese, sour cream, bacon and green onions.
