Quick, Healthy Breakfast – Blueberry Oatmeal Recipe

As a mom with 2 kids, I’m always looking for quick and healthy breakfast options. It needs to be easy, fast, nutritious and filling. If I could make a batch and eat it for the next couple days, that’s a huge bonus.
This blueberry oatmeal recipe is exactly what busy moms need. It’s easy to make, fast (in a way), has lots of fibre and fruit so its healthy and it keeps the kids full. I make a big batch in the morning and it feeds us for the next 2 days.
This breakfast oatmeal recipe is really versatile. As long as you have your oatmeal base, you could add whatever you want to it. I used steel cut oatmeal because Oprah said it’s better for you and you could use whatever oats you like, just follow the instructions on the package to cook it.
I usually use frozen blueberries and sometimes we put in apples to switch it up. Add some hemp hearts, flax or chia seeds, granola and of course your milk and sugar. You could even add in a dollop of peanut butter to cover all 4 food groups (why not?)
Here is a recipe for this easy nutritious breakfast recipe using steel cut oats
What you need:
1 cup steel cut oats
4 cups water
1 teaspoon cinnamon
2 cups blueberries
How to make it
In a saucepan, bring water to a boil.
Add oats and cinnamon.
Reduce heat to medium and simmer uncovered for 20 minutes. Stir occasionally.
Remove from heat and stir in frozen berries. The frozen fruit will cool the mixture down so you could eat it pretty quickly.
Garnish with some hemp hearts, flax seeds, chia seeds or granola.
Serve with milk and sugar.

This time when I made these I used cranberries instead and they were so good
