Ingredients:

  • 1/2 cup + 2 tbsp salted butter, divided
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 3 garlic cloves, minced
  • 1/2 cup all-purpose flour
  • 6 cups low-sodium chicken broth, divided (4 cups for filling, 2 cups for stuffing)
  • 4 1/2 cups shredded cooked chicken
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 tablespoon fresh thyme
  • 3/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon lemon juice
  • 2 (6-oz) packages chicken-flavoured stuffing mix
  • Chopped fresh parsley, for garnish

Directions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 13×9-inch baking dish with nonstick spray.
  2. In a Dutch oven or large heavy-bottomed pot, melt 2 tbsp butter over medium heat.
