Ingredients:
- 2 Cups Butterscotch chips
- 1/2 cup Peanut butter
- 6 cups Chow Mein Noodles
- Chocolate mini eggs
Directions:
Line two baking sheets with wax paper or parchment paper and set aside.
In a microwave-safe bowl melt the butterscotch chips and peanut butter in 30 second intervals, stirring after each interval, until melted and smooth.
Place the chow mein noodles in a large mixing bowl, and pour over with the melted peanut butter mixture, using a spatula to fold the ingredients together.
Use a medium cookie scoop to scoop out balls of the chow mein mixture and gently form the balls into nests with your hands.
Place 2-3 mini eggs into the center of each nest.
Allow to set before serving.
