Chocolate Zucchini Muffins

*Makes approximately 24 muffins

Ingredients:

2 large eggs
1/2 C. applesauce
1/4 C. granulated sugar
3/4 C. brown sugar
2 C. zucchini, shredded
1 1/2 C. flour
1/2 C. unsweetened cocoa powder
2 tsp baking powder
12 oz Semi-sweet chocolate chips or mini chocolate chips

Directions:

Preheat the oven to 400 degrees and spray two standard muffin tins with non-stick cooking spray or line with cupcake liners.

Combine the eggs, applesauce, sugar, brown sugar and shredded zucchini.

Slowly fold in the dry ingredients and the chocolate chips.

Fill each muffin well about 3/4 full.

Bake 17-20 minutes.

Oh! I have to try these, I would cut down on the sugar and maybe put in some date syrup instead.

These muffins did not turn out as the photo shows. Followed recipe exact. The batter seemed very thick going in. I'm wondering if maybe the recipe should include a vegetable oil. The muffins turned out chunky and did not taste very good. Texture was off and no moisture. Super unsatisfied with this recipe.

I was expecting pretty chocolatey- they were! Looked a little more chunky than pic but not by much. This is what I had hoped for and my very picky eater seemed to really like them. I really liked them so I consider this an all around WIN! Thanks for the recipe

Mine too! Followed the recipe exactly and they are way too cocoa-y and look horrible. Wondering if it was supposed to say 1/4 cup of cocoa....
