Chocolate Zucchini Muffins

*Makes approximately 24 muffins

Ingredients:

2 large eggs
1/2 C. applesauce
1/4 C. granulated sugar
3/4 C. brown sugar
2 C. zucchini, shredded
1 1/2 C. flour
1/2 C. unsweetened cocoa powder
2 tsp baking powder
12 oz Semi-sweet chocolate chips or mini chocolate chips

Directions:

Preheat the oven to 400 degrees and spray two standard muffin tins with non-stick cooking spray or line with cupcake liners.

Combine the eggs, applesauce, sugar, brown sugar and shredded zucchini.

Slowly fold in the dry ingredients and the chocolate chips.

Fill each muffin well about 3/4 full.

Bake 17-20 minutes.

  5. These muffins did not turn out as the photo shows. Followed recipe exact. The batter seemed very thick going in. I’m wondering if maybe the recipe should include a vegetable oil. The muffins turned out chunky and did not taste very good. Texture was off and no moisture.
    Super unsatisfied with this recipe.
