Chicken – You do want to use fresh chicken breasts here. You could substitute with canned chicken but it won’t be nearly as tasty. If you prefer shredded chicken instead of chicken pieces, you can also poach the chicken or use rotisserie chicken and then shred it.
Hot sauce – I used Frank’s redhot sauce but you can use your favourite brand or even homemade hot sauce.
Cream cheese – Use full fat cream cheese for the best flavour.
Ranch dressing – Use your favourite ranch dressing.
Green onion – These are optional, but adds some nice flavour to the dip.
Garlic powder – Don’t use fresh garlic.
Cheese – We are using a blend of mozzarella, cheddar, and monterrey jack, You can also substitute with any other blend of shredded cheese that you like, but do avoid pre-shredded cheese as it won’t melt nicely.

How to Make Buffalo Chicken Dip

Ingredients:
3 large boneless skinless chicken breasts, diced into small pieces
1 cup hot sauce
8 ounces cream cheese
1 cup ranch dressing
1/2 cup green onion
1 teaspoon of garlic powder
1 1/2 cup of mozzarella, shredded
3/4 cup of Cheddar cheese, shredded
¾ cup of Monterrey Jack, shredded
Salt and pepper, to taste
Directions:
Preheat the oven to 350 degrees F.
Spray a baking dish with non-stick spray.
In a skillet, cook the chicken over medium heat until cooked through.
Heat the hot sauce in a medium saucepan.
Add the cream cheese little by little, and stir until melted.
Add the Ranch dressing, garlic powder, and season with salt and pepper to taste. Mix well until everything is fully incorporated.
Remove from heat and add the sauce to the chicken, along with half of the green onions, Mozzarella, Monterrey Jack and Cheddar cheese.
Mix well.
Put the mixture in the baking dish and top with the extra cheese and green onion.
Bake for approximately 20-30 minutes, or until the cheese has melted, and the sides are starting to bubble.
Serve hot with tortilla chips and/or fresh veggies.
