This sweet & spicy pineapple salsa recipe is super easy and full of incredible fresh flavours. Serve it with tortilla chips for a fresh summer appetizer or as a topping for grilled chicken or fish.
We eat a lot of chicken and fish in my household which of course means we often find ourselves in a bit of a rut between curry chicken and the few other go-to recipes in our repertoire of pantry cooking recipes.
I came across some gorgeous fresh pineapples at the market the other day and I had one sitting around still and decided to mix things up a bit with some other fresh produce and make a pineapple salsa. Perfect for the summer season – brightly coloured, fresh and full of flavour.

This pineapple salsa pairs so well with both chicken and fish – especially when they are grilled and have that beautiful smoky flavour. I also love this salsa served with homemade tortilla chips as a fresh tasting summer appetizer.

Sweet & Spicy Pineapple Salsa
Ingredients:
1 Whole Fresh Pineapple
1 Cup Red and/or Orange Pepper, diced
1/2 Cup Red Onion, diced
1 Cup Roma Tomatoes, diced
1/4 Cup Cilantro, chopped
1-2 Jalapenos, cored, seeded and diced
1 Lime, juice of
Salt & Pepper
Directions:
To make the pineapple bowl, if desired, cut the pineapple in half just above the stem so that the stem remains attached to the larger half of the pineapple.
Cut around the edge of the pineapple, leaving about a half inch of flesh on the fruit.
Cut down the middle of the pineapple and cut the pineapple into sections and scoop out with a spoon.
Drain the pineapple of any extra juice. Set aside.
Dice pineapple into small pieces for the salsa then combine in a medium bowl with sweet pepper, onion, tomatoes, cilantro, jalapenos, lime juice, salt and pepper.
Spoon the salsa into the pineapple bowl to serve.
Enjoy.
