You won’t have to wait in line for these food truck-inspired Baja Pork tacos. Creamy avocado is spread on warm flour tortillas creating the perfect base for seasoned ground pork. All this served with fresh tomato salsa on top!
This recipe for Baja Pork Tacos with fresh salsa and avocado is adapted from the Chefs Plate recipe.
Chefs Plate is a Canadian meal kit delivery service that delivers ingredients and recipes to your door weekly. Meal delivery services like Chefs Plate appeal to me because it can be a nice break from meal planning and the mission that has become shopping during this pandemic. It also makes trying healthy new recipes easy.
I was not sent a kit to recreate this recipe, I sourced the ingredients locally myself. Which is why my photos show Jalapeno peppers instead of the Poblano peppers called for.
Overall I was impressed with the depth of flavour found in these tacos from the spiced pork to the tangy tomato salsa brought together with creamy avocado, cheese and sour cream and wrapped in a warm tortilla. These aren’t your typical tacos but they didn’t take much more time or effort than our usual boxed kit tacos.

Baja Pork Tacos
Prep Time: 5 mins | Cooking time: 30 mins
Ingredients:
2 Tsp Vegetable Oil
1lb Ground Pork
12 Flour Tortillas
2 Poblano Peppers (or Jalapeno)
1 Roma Tomato
1 Lime
1 Avocado
1/2 Cup Cheddar and Mozzarella Cheese, shredded
3/4 Cup Sour Cream
2 tbsp Taco Seasoning
Salt
Directions:
Gather all of your cooking tools and then start the recipe. Read the entire recipe card. Wash and dry all produce. Cut poblano into 1/4-inch slices. Cut tomato into 1/4-inch pieces. Halve, pit and peel avocado. Juice lime.
In a large non-stick pan, heat 2 tsp oil over medium-high. When the pan is hot, add pork, poblano and Chili-Cumin Spice Blend. Season with salt and pepper. Cook, breaking up pork with a spoon, for 4-5 min, until browned. Drain any excess fat from the pan if desired.
While taco filling cooks, in a small bowl, mash together avocado and 2 tsp lime juice. Season with salt and pepper. In a medium bowl, stir together tomatoes and 2 tsp lime juice and 1 tsp oil. Season with salt and pepper.
Wrap tortillas in paper towel and microwave on high, for 1 min, until warm and flexible.
Spread mashed avocado over tortillas, then top with taco filling. Sprinkle over cheese, spoon over tomato salsa and dollop with sour cream. Enjoy!
