Pumpkin Spice Cookies with Maple Icing

Pumpkin Spice Cookies with Maple Icing

..and so Pumpkin season begins!  I love pumpkins but wanted to take it beyond the traditional pumpkin pie.    These cookies are everything great about pumpkin pie except they are easier to eat on the go.

They come out super soft and fluffy.  Deliciously spicy and just a little sweet.  The Maple Icing really puts these Pumpkin Spice cookies over the top.  Enjoy!
