Christmas Tree Meringues

Ingredients

  • 4 large egg whites, at room temperature
  • ½ teaspoon cream of tartar
  • ⅛ teaspoon salt
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Green gel food colouring
  • Optional: nonpareils (as ornaments)
  • Optional: star sprinkles (may melt or cause the trees to lean)
  • Optional: powdered sugar for a snowy finish

Directions

  1. Preheat the oven to 225°F (105°C) and line two baking trays with parchment paper.

  1. Place the egg whites, cream of tartar, and salt into a clean, grease-free mixing bowl. Beat on low until the mixture becomes foamy. (Image 1)

  3. Continue whisking until the mixture is thick, glossy, and holds stiff peaks. Rub a tiny amount between your fingers – if you feel any grittiness, keep whipping until it’s smooth. (Image 2)

  5. Bake for 1 hour. Switch off the oven and let the meringues cool inside without opening the door for 2 hours, or until fully dry.
  6. Once cooled, dust lightly with powdered sugar for a snowy look, if desired. Store in an airtight container for up to 1 week.
