Dragonfruit Mock Mojito Recipe

Happy Cinco De Mayo!  Here is a delicious Mexican inspired non-alcoholic drink perfect for celebrating with.

I haven’t drank much over the last 3 years between being pregnant or breastfeeding all this time.  While I don’t miss the hang overs or even the feeling of getting a little buzzed, I do miss the fancy drinks.  I have to admit that being offered the options of water or soda gets dull at parties.  This Dragon Fruit Mock Mojito is pretty “fancy” looking and tasting and the perfect way for non-drinkers to get in on the fun.  

The Dragon Fruit is native to Mexico and a really spectacular looking fruit.  It is sweet tasting – like a mix between a ripe kiwi and a pear.  I actually prefer them to kiwi because it is easier to tell when they are just perfect – it should give just a bit when you press it with your thumb.  They were on sale this weekend at my local grocer so I decided to pick up a few and see what I could come up with and I have to say I am pretty impressed with myself and this Dragon Fruit Mock Mojito!

I guarantee that this mojito will have the alcohol drinkers asking for one! (They could always replace the simple syrup with vodka for a real mojito.) 

Dragonfruit Mock Mojito Recipe

Ingredients:

Servings: 1

2 tablespoons fresh dragon fruit
1 Strawberry, Sliced
10 mint leaves
2 oz homemade simple Syrup*
1 Tbsp fresh lime juice
3 oz Tonic or Sparkling water

Method:

In the bottom of a glass or cocktail shaker, muddle the dragon fruit, strawberry, mint leaves, and lime juice until well combined.

Add the simple syrup to the glass and stir to combine (or to the shaker and shake).

If Using a cocktail shaker, strain into a glass.

Top with tonic or sparkling water.

Garnish with a lime wedge and mint leaves.

*To Make Homemade Simple Syrup: Combine 1 part water with 1 part sugar. Bring them to a boil in a small pot and stir for 5 minutes. Cool the syrup before adding it to your drink.
