 Life with children can be hectic at the best of times which can often mean last minute thrown together meals or worse, having to order out.   It’s nice to have a few fall back dinners in your back pocket as go-to meals when you are in a rush or just don’t feel like slaving over a stove for a long period of time.

This recipe for Sweet and Sour Pork is beyond quick and easy thanks to Maple Leaf® Country Kitchen® Smoked Ham.  Since the ham is already cooked it does not take a lot of cook time when incorporated into tasty recipes like this.  Forget takeout, I love how complex the flavours are in this dish.

15 Minute Sweet and Sour Pork

Ingredients:

1 Tbsp Olive oil
1 Maple Leaf® Country Kitchen® Smoked Ham, cut into 1″ cubes
2 Red peppers, cut into 1” pieces 
1 medium onion, chopped
1 (8 ounce) Can pineapple chunks, juice reserved
1 cup water
1/4 tsp salt
3/4 cup brown sugar
1/3 cup apple cider vinegar
1/4 cup ketchup
1 tbsp soy sauce
2 Tbsp cornstarch

 

Directions:

Whisk together cornstarch with soy sauce in a medium sized bowl until smooth then whisk in water, salt, brown sugar, vinegar, and ketchup then set aside.

Heat oil in a wok over medium-high heat.

Stir-fry ham, red pepper and onion until vegetables are just tender crisp. 

Add pineapple chunks and cook for 2 minutes more.

Stir sauce into ham and vegetable mixture then bring to a boil and cook for 1-2 minutes or until the sauce thickens.

Serve hot over Rice or Noodles.

    1. haha! Noodles take like 10 minutes to cook and rice only bumps it by 5 minutes. (Unless there is some kind of extra processed rice that takes less?!)
