Blueberry & Quinoa Salad with Flax Lemon Vinaigrette
This Blueberry & Quinoa Salad and the Flax Lemon Vinaigrette that goes with it is full of “Superfoods”.
Beets are truly “nature’s multivitamin” as they contain an incredible range of vitamins, minerals and antioxidants.
The Vinaigrette is equally filled with superfood – Flaxseed oil, Lemon, Garlic and Cayenne!
Oh and I guess I should mention just how delicious this salad is! I love the zesty flavour of the vinaigrette paired with the nutty and slightly sweet and savoury flavour of the salad itself. Perfecto!
Blueberry & Quinoa Salad
Ingredients
- 2 cups Raw kale, stem removed and Shredded
- 1.5 cups Fresh Blueberries
- 1.5 cups Cooked quinoa, cooled
- 1 cup Raw beet, peeled and grated
- 4 tbsp Chia Seeds
- ⅓ cup Flax lemon vinaigrette (see recipe below)
- ¼ cup Slivered Almonds
Flax Lemon Vinaigrette: Yields 1/3 cup
- 2 tbsp Lemon juice
- 1 tsp Lemon zest, finely grated
- 1 tsp Freshly Ground Black Pepper
- ½ tsp Sea Salt
- 1 tsp Cayenne Pepper
- 1 Clove Garlic, Minced
- 3 tbsp Flax seed oil
Vinaigrette
• In a bowl, whisk together first 5 ingredients
• Slowly pour in the flax seed oil and continue to whisk until well combined.
Salad
• In a bowl combine kale, blueberries, cooled quinoa, grated beet, chia seeds and flax lemon vinaigrette.
• Top with slivered almonds.

I made this tonight and used olive oil instead of flax. I didn’t have any lemon rind but it was good without it. I used chopped pickled beets and added extra almonds as I love them. lol The husband didn’t like it but I don’t mind as I love it and can eat it myself over the next few days 🙂
To be fair, my husband doesn’t like it either but that doesn’t stop me from making it! lol Glad you like it!
He may like it eventually. If I only made what he “likes” we’d eat nothing but meat and potatoes. He’s learned to suffer with what I make and is likely healthier for it 🙂 That’s why I asked you first how long it keeps as I knew I’d likely be the only one eating it. lol
