About the Lemon Thyme Chicken Ingredients

Lemon – Use fresh lemon as you will want the zest for the best lemon flavour.

Oil – Use vegetable oil as it can withstand the high heat from grilling. Helps to keep the chicken moist.

Honey – Balances out the lemon just enough without making the marinade sweet.

Garlic – I call for 2 cloves but that is AT MINIMUM. I’m pretty heavy handed with garlic so usually throw in at least double that.

Thyme – Use ground thyme for best flavour. Fresh thyme will get bitter on the grill. Finish off your chicken with fresh thyme if you like after it is off the heat.

Chicken – I love boneless skinless chicken breast but this works well with whole chicken, bone-in skin-on chicken, chicken thighs, you name it. The marinade is perfect for any cut of chicken. Simply adjust your cooking time accordingly.

Lemon-Thyme Chicken

Ingredients:

1 Lemon
2 Tbsp Vegetable Oil
1 Tbsp Honey
2 Garlic Cloves, minced
1/2 tsp Ground Thyme
Salt
Pepper
4 Boneless Skinless Chicken Breasts

Directions:

Stir finely grated lemon peel and 2 tbsp lemon juice with oil, honey, garlic and seasonings.

Pour the marinade over the chicken and leave at room temperature, covered, for 30 minutes.

Place on a greased barbecue grill or under a preheated broiler, about 4 inches from the heat.

Grill about 6-7 minutes per side or until chicken feels springy to the touch.

My husband is the worlds must finicky eater couple that with his allergy to onions and garlic it's tough. I subbed powder garlic for gloves, ( the enzyme in fresh or cooked is what he can't process) He said this can go on the rotation. Good enough to have with company too.
