What is Fondue?

Fondue is a Swiss melted cheese dish which is served in a communal pot and eaten by dipping bread into the cheese with long-stemmed forks. The name “fondue” comes from the French verb fondre which means “to melt”.

The earliest known recipe for modern form of cheese fondue was published in a 1699 book from Zürich under the name “Käss mit Wein zu kochen” (to cook cheese with wine).

Fondue became popular in the US in the 1950s and 1960s. Fondue parties were seen as a great way to entertain guests with an interactive meal.

The term “fondue” has been generalized to other dishes such as chocolate fondue, where pieces of fruit or pastry are dipped into melted chocolate mixture, and fondue bourguignonne, where pieces of beef are cooked in hot oil or broth.

Peanut butter fondue – Add a couple spoonfuls of peanut butter into the chocolate fondue and gently swirl it in.

Nutella fondue – Switch out the chocolate for Nutellla.

Equipment You Will Need for a Fondue Board

Charcuterie or cutting board – I used a wood cutting board for mine but you could use what you have on hand. A tray or baking sheet would also work.

Wilton fondue set – We used the Wilton fondue set for our board. It’s ceramic and really easy to setup and use, so I would definitely recommend it if you are looking for a set for yourself. I would recommend not just melting chocolate in a bowl and going that way as the chocolate will harden up pretty quickly.

Americans have a bit more of a choice when it comes to cute cookies for Valentine’s day. I wasn’t able to find these so they didn’t make it on my board but check these out:

What you Need for this Valentine’s Day Fondue Board

Fruit – I used fresh strawberries, cherries, and bananas. Apples, oranges, kiwi, melons, and pineapple are all great choices too.

Cookies – I used strawberry wafer cookies, Shasha cocoa snaps, and rolled wafer cookies. I also bought some cute macarons but they didn’t make it on the board. The shasha cocoa snaps are heart shaped chocolate cookies that are made in Canada. You can use any kind of cookie you like here instead, I’ve included some suggestions above.

Rice krispies – I just made a tray of homemade rice krispies following the original recipe, and once cooled I used my wilton heart cookie cutter to cut them into delicious hearts.

Marshmallows – I found two different types of heart marshmallows at Dollarama. I also found these heart marshmallows on Amazon for my American friends.

Pretzels – Just regular old pretzel twists. They look a bit like hearts and are delicious with chocolate.

Sprinkles – I included a few Wilton Valentine’s day sprinkles as well so the kids could add even more fun to their treats.

Chocolate – I used a package of semi-sweet chocolate chips but you could use milk chocolate, dark chocolate, white chocolate or even candy melts.

Cream – To make a delicious creamy ganache.

How to Make a Valentine’s Day Chocolate Fondue Board

Yields: 4-6 Servings | Prep time: 15 Minutes

Ingredients:

  • 12 oz (340 g) Strawberries
  • 12 oz (340 g) Cherries
  • 1 Banana, sliced
  • Pretzels
  • Strawberry wafer cookies
  • Rice krispie treats, cut into hearts
  • Heart shaped marshmallows
  • Rolled wafer cookies
  • Chocolate heart cookies
  • 12 oz (300 g) Chocolate chips
  • 1 cup heavy cream
  • 1 Tablespoon vanilla extract

Directions:

Place the bottom of your fondue set in the middle of the board. Light a candle and place in the base of the fondue set.

Arrange all the ingredients around the board.

Pour chocolate into a heatproof bowl.

In a small saucepan, bring heavy cream to a simmer, stirring occasionally. As soon as the cream simmers, remove from heat and poor over chocolate and stir gently to make sure all the chocolate is covered.

Let the bowl sit for 5 minutes then whisk starting in the centre and work outward until smooth. Whisk in the vanilla extract.

Pour the chocolate ganache into the bowl of the fondue set. Set on top of the fondue base.
