Tips & Tricks
- Uniform Chopping: Cut the potatoes and sausage into even-sized pieces to ensure even cooking.
- Extra Flavour Boost: Brown the sausage in a skillet before adding it to the crockpot for a richer flavour.
- Thicker Sauce: For a thicker consistency, mash a small amount of the cooked potatoes into the sauce before serving.
- Make it Spicy: Add a pinch of red pepper flakes or a chopped jalapeño for a spicy kick.
- Add More Veggies: Try adding mushrooms, zucchini, or carrots for extra texture and flavour.
- Garnish for Freshness: Sprinkle with fresh parsley or green onions before serving for a fresh contrast.
Storage Instructions
- Refrigerator: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or on the stovetop.
- Freezer: Freeze cooled portions in freezer-safe containers for up to 3 months. Thaw in the fridge overnight and reheat before serving.

Ingredients & Substitutions
- Russet potatoes – Yukon Gold or red potatoes work well for a creamier texture.
- Onion – Yellow or white onions add sweetness, while red onions provide a sharper bite.
- Diced tomatoes – Use fire-roasted tomatoes for extra flavor, or substitute with crushed tomatoes for a smoother consistency.
- Bell pepper – Red, yellow, or orange bell peppers can be used for a slightly sweeter taste.
- Smoked paprika – Regular paprika or chili powder can be used, but smoked paprika adds a deep, rich flavour.
- Salt – Adjust based on your preference or dietary needs.
- Black pepper – Feel free to add more or swap with white pepper for a milder taste.
- Smoked sausage – I used Polish sausage, but Andouille sausage, kielbasa, or chorizo are great alternatives.
- Chicken broth – Vegetable broth or beef broth can be used for a different depth of flavour.
