Today I’m sharing one of a slow cooker favorite – cube steak with lots of mushroom gravy. The slow cooking turns even the toughest cuts of meat into tender bites of comforting goodness.

Tips for Making the Best Slow Cooker Cube Steak

  • If using frozen cube steak, ensure that it is given the time to defrost first otherwise it may not cook through.
  • The gravy continues to thicken as it sits but if you find that it is too thin, make a cornstarch slurry with 1 tablespoon cornstarch mixed with 1 tablespoon water and mix that into the gravy during the last half hour to hour of cooking time.
  • If the gravy is too thick, you can mix in ¼ cup more of beef broth or even water into the gravy during the last half hour to hour of cooking time.

How to Store Leftover Cube Steak

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop until heated through.

Cubed steaks – Not to be confused with stewing beef, cubed steak is also known as minute steak. It’s usually cut from top sirloin or top round, then tenderised and flattened with a meat tenderiser. If you can’t find cube steak, you can substitute it with another inexpensive cut of beef. You’ll need to tenderise it by pounding it out with a meat mallet.

Mushroom soup – The cream of mushroom soup can be substituted with cream of chicken soup or cream of celery soup. The flavour of the gravy will be a little different, but still delicious!

Beef broth – To limit your salt intake, you can make this with low sodium beef broth or substitute it with water.

Onion soup mix – 1 oz packet, or 2 tablespoons of onion soup mix. Do not prepare before adding.

Brown gravy mix – .87 oz packet of brown gravy mix.

Seasoning – Garlic powder and black pepper help to season the dish. I recommend that you do not add salt as there is quite a bit in this dish already.

Mushrooms – Button or crimini mushrooms work well.

Parsley – Adds a bit of freshness to the dish, optional.

How to Make Slow Cooker Cube Steak

Yields: 6-8 servings | Prep time: 5 minutes | Cook time: 4 hours

Ingredients:

  • 2 pounds cubed steak
  • 2 (10.5 oz) cans cream of mushroom soup
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 1 packet brown gravy mix
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 4 ounce mushrooms, sliced
  • Fresh parsley, for garnish

Directions:

Ingredients except steak and mushrooms added to the slow cooker then combined together.

In your Crock-Pot or slow cooker, combine cream of mushroom soup, beef broth, onion soup mix, gravy mix, and seasonings. (Image 1 & 2)

Place cubed steak in the Crock-Pot, spreading them out evenly in a single layer. (Image 3)

Pour some gravy over the steaks and add sliced mushrooms. (Image 4)

Cover with the lid and cook on low for 6-8 hours or high for 3-4 hours, or until the steaks are tender.

Cooked cube steak sprinkled over with parsley.
