Puff Pastry Christmas Trees

Yields: 12 pinwheels | Prep time: 20 minutes | Cook time: 18-22 minutes

Ingredients:

  • 1 package frozen puff pastry, thawed (about 9×11 inches per sheet)
  • 2 tbsp butter
  • 2 cups fresh spinach
  • ¼ cup onion, diced
  • 5 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 3–4 cooked bacon strips

Directions:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Cook vegetables – Melt butter in a frying pan over medium heat. Add onion and cook until softened. Stir in spinach and cook until wilted. Remove from heat.
  3. Make the filling – In a large bowl, mix the spinach and onion with cream cheese. Crumble in the bacon and fold everything together.
  4. Assemble pastry – Place one puff pastry sheet on the prepared baking sheet. Spread the filling evenly over the pastry, leaving 1 inch uncovered along one long edge. Sprinkle cheddar cheese on top. (Image 1) Place the second puff pastry sheet over the filling and press lightly to seal.
  5. Cut into strips – Slice the layered pastry into strips about 1 inch wide.
  6. Shape into trees – Thread each strip onto a wooden skewer, zig-zagging it back and forth down the skewer to form a Christmas tree shape. (Image 2) Place the skewers on the baking sheet.
  7. Bake – Bake for 18–22 minutes, until puffed and golden brown.
  8. Decorate & serve – Optional: cut small stars from cheddar slices and attach one to the top of each tree with a toothpick. Serve warm.
