These mini gingerbread cheesecakes are the perfect holiday party dessert. Festive & spiced, they are sure to be a party favourite!
Gingerbread is one of my most favourite flavours of the holiday season and these mini gingerbread cheesecakes are one of my favourites.
Rich and creamy with all that good gingerbread flavour.
So tasty, and such a welcome addition to any holiday dessert table!
To decorate just add a dollop of whip cream and a gingerbread man. You can use my favourite gingerbread cookie recipe or use store bought gingerbread men.

Mini Gingerbread Cheesecakes
Ingredients:
1 C Graham Cracker crumbs
2 tbsp unsalted butter, melted
½ tsp ground cinnamon
2 – 8oz oz softened Cream Cheese
1/2 C Light Brown Sugar
1 tbsp Flour
1 Large Egg
1/2 tsp Vanilla extract
1/2 tsp ground nutmeg
1 tsp ground cinnamon
¼ tsp ground ginger
2 tbsp molasses
Fresh whipped cream, Christmas sprinkles and a Gingerbread Man for topping
Directions:
Preheat oven to 350 degrees and line a cupcake pan with cupcake liners
In a large bowl, mix together the graham cracker crumbs, butter, ½ tsp ground cinnamon until a wet sand like mixture forms
Scoop about 1 tbsp of the crust into the paper liners
Use a flat bottomed cup to flatten the crust
Set aside
Cheesecake
Using a large mixing bowl, beat together the cream cheese and light brown sugar until combined and smooth
Beat in the egg, flour, ½ tsp nutmeg, 1 tsp ground cinnamon, ¼ tsp ground ginger, 2 tbsp molasses and vanilla until combined and smooth
Scoop about 2 ½ tbsp of the batter into the liners
Bake in the oven for 20 minutes or until the centre has set
Allow to cool to room temperature before removing from the pan and placing into the fridge overnight
Top with fresh whipped cream, sprinkles and the gingerbread man
Enjoy!

@Lindsay, It makes 12 regular size muffin cup cheesecakes, you could get more if you used the mini cupcake liners.
