Ingredients
- 2 Cups Graham Cracker Crumbs
- 1/4ย Cup Butter, melted
- 1 1/2 Cups Powdered Sugar
- 1/2 Cup butter, softened
- 2 Eggs
- 10 oz Whipping Cream
- 1 teaspoon Vanilla Extract
- 20 oz Can Pineapple, Crushed
Directions
- Using an electric mixer, cream together the butter and powdered sugar in a large bowl until light and smooth.
- Add the eggs, one at a time, beating well after each addition. Set aside.
- In an 8 x 9 inch baking dish, combine the graham cracker crumbs and melted butter, reserving 1/4 cup of crumbs for the topping. Press firmly into the bottom of the pan to form the crust.

Pineapple delight is a rich and sweet no-bake dessert full of tangy pineapple, rich whipped cream and a buttery sweet filling.
Ingredients
- 1 1/2 Cups Powdered Sugar
- 1/2 Cup Butter, Softened
- 2 Eggs
- 10 oz Whipped Cream
- 2 Cups Graham Cracker Crumbs
- 20 oz Can Pineapple, Crushed
- 1/4 cup Butter, Melted
Instructions
- Cream together sugar and butter.
- Add 1 egg at a time and beat.
- Place a layer of graham cracker crumbs in the bottom of an 8"x9" dish, reserving some for sprinkling. Stir in melted butter an press into bottom of the dish.
- Spread butter mixture over graham crumbs then spread with whipped cream and add a layer of pineapple.
- Sprinkle reserved graham cracker crumbs over the top.
- Chill.

I’m struggling with the filling, does it set up? I made it and it was loose like a thin batter, I had to throw it out
The filling should have the texture of a slightly looser buttercream, it should be thick and fluffy. Did you use softened butter or melted? A little confused here, because this is a vintage recipe that is more than tried and tested, we make it all the time and I have never had the filling turn out like a thin batter – there isn’t enough wet ingredients for this to happen. Did you maybe mix the cream into the butter mixture rather than preparing it for it’s own separate layer?
You cream the butter and icing sugar together then beat in the eggs. Scrape that into an even layer over the prepared graham crust and top with prepared whipped cream (homemade) and sprinkle over with the crushed pineapple and more graham crumbs.
Could pineapple be added to the butter mixture? Thanks
I haven’t tried that, I think the pineapple juice might curdle the butter mixture but I could be wrong.

I have an avocado brownie recipe that is diabetic friendly if you swap the honey for stevia or liquid monk fruit. I am not diabetic so most of my desserts are treats, and not geared towards being healthy. This brownie is made without white flour though so it’s perfect for diabetics or anyone following the Keto diet.
