My Nectarine tomato burrata salad is a vibrant summer salad featuring sweet nectarines, juicy heirloom tomatoes, creamy burrata, and fragrant basil, all drizzled with a simple pesto dressing.

The inspiration to make this dish came after a trip to Disney, where a burrata salad at Space 220 sparked the idea to recreate something similar at home with a summery twist.

This salad is a celebration of peak summer produce – fresh, colourful, and full of bold, contrasting flavours. The creamy burrata pairs beautifully with the tangy tomatoes and the sweetness of ripe nectarines, while the peppery arugula and crisp microgreens add freshness and bite.

Finished with toasted pine nuts for crunch and a generous drizzle of pesto, it’s the perfect dish for warm-weather entertaining or a light al fresco meal.

Ingredients:

For the Salad:

  • 3 cups arugula
  • 2 large heirloom tomatoes, sliced
  • 1 cup cherry tomatoes, halved (mix of red, yellow, and orange)
  • 2 ripe nectarines, thinly sliced
  • 2 balls burrata cheese, halved
  • ¼ cup fresh basil leaves
  • 3 sprigs thyme, stripped
  • ¼ cup micro radish greens
  • 3 tbsp toasted pine nuts

For the Pesto Dressing:

  • 3 tbsp store-bought pesto
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice

Directions:

  1. Make the Pesto Dressing: In a small bowl, whisk together the pesto, olive oil, and lemon juice until well combined.
