- Use room temperature eggs.
- Do not follow the instructions on the box, or use the called for ingredients. Use only the ingredients listed here.
- Mix the dough until just combined, do not over-mix.
- Fold in the sprinkles, do not mix hard or the colours may bleed.
- If the dough is sticky, chill in the fridge for about 30 mins to an hour before forming the dough balls.
- Bake time will vary from oven to oven. I found just a little over 9 minutes was best but it may be different for you.
- Don’t allow the cookies to brown or they won’t be soft. The edges should just be starting to brown and the tops set when they are done.
How to Store Cake Mix Cookies
Cookies can be stored in an airtight container at room temperature for up to 5 days. They will be best within 3 days, and start to lose their softness as time goes on.
Baked cookies can also be frozen for up to 3 months. Thaw at room temperature for about an hour when ready to enjoy frozen cookies.
Equipment Needed to Make Cake Mix Cookies
You don’t need anything more than a bowl and a whisk to make these cookies, and parchment paper on a cookie sheet to bake them.
To make life easier you can use an electric stand mixer or electric hand mixer, but I find it is more effort to get my electric mixer out than it is to mix the dough by hand.
You may also want to prevent waste by using a silicone liner instead of parchment paper.

Cake Mix – For these cookies stick with lemon cake mix. If for some reason you can’t find lemon cake mix, then you can substitute in yellow cake mix and use more lemon extract.
Eggs – Use room temperature eggs so that the batter will come together nicer, resulting in fluffier cookies.
Oil – Vegetable oil is best but you can use any neutral flavoured oil. Vegetable shortening also works, and honestly I think it works better than vegetable oil but not everyone keeps it on hand, and I wanted to keep this recipe simple. Butter is another great option too. These oils are all swappable 1:1.
Lemon extract – Really amps up the tangy lemon flavour in the cookies.
Mix ins – You can use any mix-ins you like, I’ve included some ideas above. To make the cookies as photographed, use a mix of bright rainbow sprinkles.

- 15 1/4 oz (432 g) Lemon Cake Mix
- 2 Large eggs
- 1/3 cup (79 mL) Vegetable oil
- 1 teaspoon Lemon extract
- 1/2 cup Sprinkles or 1 cup White chocolate chips, optional

Preheat oven to 350° F. Line a baking sheet with parchment paper or a silicone liner and set aside.
In a large bowl, beat together the cake mix, eggs, oil, and lemon extract until combined.
