Honey Chipotle Chicken Skewers
Servings: 6 | Prep Time: 10 minutes (plus marinating time) | Cook Time: 10 minutes
Ingredients:
- ¼ cup honey
- ¼ cup chipotle peppers in adobo sauce
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon soy sauce
- 3 cloves garlic, peeled
- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- Fresh cilantro, chopped, for garnish

Directions:
- Add the honey, chipotle peppers, lime juice, soy sauce, and garlic to a blender or food processor. Blend until smooth. (Image 1)
- Reserve half of the sauce for basting.
- Place the chicken in a large bowl or resealable plastic bag. Add the remaining marinade and toss to coat. Cover and refrigerate for at least 20 minutes, or overnight. (Image 2)
